Growing up, Paula can remember Uncle Nick’s and Aunt Wanda’s kitchen being filled with the sizzling sounds and the mouth watering smells of his pork chops, bbq, and lots of fresh homemade foods.
Nick has brought his unique and savory flavors to the Colbert, Oklahoma area for many years. It’s just in the past decade that he introduced his flavor packed tamales and can sell out on any given day of the week.
Wanting to bring others the joy Paula, her family and all of the Bryan county area have experienced eating Nick’s Tamales, she and her husband JD spent many Saturdays in 2017 by Nick’s side learning not only ingredients but techniques that go into his rich tamales, salsa, and black beans so they could bring them to the Oklahoma City area.
Nick's Tamales Food Truck was opened in May 2018 by JD and Paula. Sadly, a few months later Nick unexpectedly passed away. He was here to see his legacy of delicious tamales carried on and his spirit is still with us today!
